Of our more than 60 vineyards spread across the island, a vast majority are 40 years or older. Beautiful, well-adapted old vines that we labour, prune, maintain and hand-harvest ourselves.
Our Geographically-Protected Indication (GPI) Vino de la Tierra Ibiza allows us to grow nine different grape varieties: Monastrell, Cabernet, Tempranillo, Syrah, Merlot in dark grapes and Malvasía, Chardonnay, Moscat and Macabeo in white grapes.
Of these, only two are autochtonous to the island: Monastrell (also known as Mourvèdre) and Malvasía. They account for 92% of the wine that we make.
Our challenge is to make the best possible wines with the smallest possible impact on our environment thereby protecting the island's 2.800 year-old viticultural heritage.
We use only fertilizers and pesticides that are 100% free of chemicals.
This form of pruning is considered the most sustainable for older, dry-farmed vines.
All our grapes are hand-picked in 12-kilo crates to avoid crushing.
All our wines are fermented using our very own "starter" yeasts.
SO² levels in our wines are below those mandated for "biodynamic" wines.
268 rooftop solar panels generate 86% of our energetical needs.
We offer twice daily tastings in English, Spanish or French. They last 1½ to 2 hours and include a video presentation followed by a tasting of 5 different wines.
